6 Recipes for Meal Prep Sunday

I’ve been slowly (very, very slowly) getting better at preparing my meals at home. I’m sharing more about that this week, in fact, but a big part of it is grocery shopping on one day and getting what I need for the week. I know this is common sense, but, um, it took me a while to fully come around to the idea. Now I fully get it!

Are you on the meal prepping train? I feel like my entire Instagram feed is filled with people sharing their meal prep on the weekends and it is totally inspiring. While I do like to batch cook on the weekends, I wouldn’t say that I’m at the level of portioning off all my meals on the weekend into containers that I can just grab throughout the week. But, these recipes are the kind of meal prep Sunday recipes that would lead to just that!

1. One-pan chicken with cauliflower, carrots and Brussels sprouts

This one-pan chicken dinner is your essential meal prep recipe. It all roasts in one pan and then all you have to do is let it cool and portion it out into containers and your lunches are done! I also use more budget-friendly cuts of chicken for this dish.

2. Slow cooker chicken noodle soup

This is a set it and forget it slow cooker recipe which is perfect for meal prepping because it takes literally zero effort. All you need to do is dump the ingredients into your slow cooker and turn it on! I love chicken noodle soup, and this recipe uses a whole chicken, the meat is shredded after it’s cooked and noodles get added in the last 20 minutes.

3. Mini pesto potato spinach frittatas

These little protein-packed bites are the perfect grab-and-go breakfast or quick 3 pm snack! Easy to prep on the weekend and snack on throughout the week—they keep well in the refrigerator and are vegetarian!

4. Green smoothie prep

I used to prep little “smoothie baggies” and keep them in the freezer so I could make a quick and healthy breakfast in the mornings. For this recipe, you can freeze everything just leave out the yogurt and coconut water (add those just before blitzing in the blender).

5. Three bean garden salad with coconut dressing

This vegan salad is one of those recipes that actually gets better a day or two after it was made. Salads are tough to meal prep because they don’t usually hold up well in the fridge, that’s why if you do want to prep a salad choose one that isn’t lettuce or greens-based.

6. Rice and beans

This is one of my go-to dishes because it’s so cheap and easy to make! Plus it works as a side or as a meal in of itself. I like to make a pot of rice and beans on the weekend because I know it’s something that I’ll love throughout the week.

Jumped into the meal prep bandwagon today. I was totally lost and not sure of what I was doing but it turned out well thank goodness! Decided to start doing it myself ‘cos having someone prep my meals for me is way too expensive. I’d surely try these in the coming weeks 🙂
