7 Incredible Sandwich Recipes

love sandwiches. Whenever I go out to eat lunch, I like to get a great sandwich. I’m all for a delicious turkey club, but I’m also down to try any kind if it comes recommended. My friend Victoria makes the absolute best sandwiches (she could open up a restaurant with them), and she inspired me to start making them at home. I haven’t kept up with it over the winter, but now that it’s warming up, I know I’ll be in the mood for some. Loving Louisa’s recommendations today. YUM!

7 Incredible Sandwich Recipes

Guest post by Louisa from Living Lou

Can we talk about sandwiches for a second? I love sandwiches but didn’t realize just how much I love them until I took a trip down memory lane (aka the archives of my blog) to find that I have posted a ton of sandwich recipes over the years. I know, I was surprised too!

There are a few incredible sandwich spots in Toronto, and I’ve learned that the key to a good sandwich is layers of flavor and the bread—yes the bread! If you don’t have a delicious, fresh loaf of bread, you will have a sad sandwich.

1. Avocado Chicken Salad

I love chicken salad. It’s so retro, but I’ve always had a soft spot for a creamy chicken salad sandwich. For this recipe, I wanted to see if I could lighten it up by replacing the mayonnaise with avocados and Greek yogurt, and you guys, it totally worked! I also use fresh basil in here (basil + avocados is actually incredible).

2. Lighter Tuna Salad Pockets

For this tuna salad, I like to serve it in a pita pocket. Like chicken salad, tuna salad is one of my favorites but I always find it to be a little too heavy, with the tuna and mayonnaise. For this, I use diced apple, green onions and capers to elevate it into something special.

3. Chicken Caesar Salad Sandwiches

Another twist on chicken salad! I make these in the slow cooker, but you can easily use premade shredded chicken, just toss in your favorite caesar dressing and you’ve got an incredible sandwich! I like to serve these on the most adorable mini bagels (am I the only one who loves mini foods?).

4. Bacon, Avocado, and Egg Salad Sandwiches

With Easter around the corner, I bet you are going to have a ton of leftover hard boiled eggs, and this is the perfect way to use them! My favorite breakfast sandwich is a bacon, avocado, and fried egg sandwich so I used that as inspiration for this recipe!

5. Healthy Chicken Lettuce Wraps

Is it a bit of a stretch to call lettuce wraps a sandwich? I don’t think so, so stay with me on this one. These chicken lettuce wraps are so good for you (I developed this recipe when I was on a detox, on which I only lasted three days, ha!).

6. Make Ahead Antipasto Loaf

If you think about your favorite antipasto plate, this recipe is that in sandwich form. The best part is you can make this the night before, and it’s better the second day. Trust me.

7. Vegetarian Taco Wraps

This is a black bean taco in wrap form, and it literally takes 5 minutes to make. I used to eat these for breakfast, lunch, and dinner during college!

Bonus: Avocado Horseradish Sandwich Spread because a sandwich is really all about the spread. This is my favorite for roast beef sandwiches!
