Easy and Healthy Lunch

I wanted to share one of my favorite healthy lunches. I’m one of those people who can eat the same thing every single day. I don’t officially “meal prep” on Sundays since I work from home and it’s not completely necessary. However, I do tend to grocery shop on Sunday afternoons, with the rest of the town haha, and I make what I buy then work all week long. Sometimes I’ll make a big thing of chili, or a hearty soup, or grilled chicken + veggies.

This is one of my go-to “recipes” for weekday lunches. I typically decide to make it my week’s lunch when I get to the grocery store and avocados are on sale. (I only buy avocados on sale… those things get so expensive!)

Easy Healthy Lunch

So I copied this recipe from a local restaurant. They charge $12 for it and I loved it a lot after I got it one time but couldn’t stomach the price. It’s super easy to make at home. A rough estimate is about $4/meal. (But since the bread can be stored in the freezer until use and the honey mustard lasts for a while, you can make it for under that.)

You might call it a hearty salad with a piece of bread or an open-faced turkey sandwich. It’s somewhere in between.

Ezekiel Bread Sandwich

What you need:

– Ezekial Bread (my grocery store was very low on options so I had to pick the sesame, it’s not my first choice.)

– Turkey Bacon

– Roasted Turkey Slices

– Spinach

– Avocado 

– Tomato

– Honey Mustard (or any dressing/sauce you want!)

What makes it such a good weekday lunch option is that it doesn’t take a lot of preparation. The only thing you have to cook is the bacon! I typically fry my bacon on a daily basis, but you could easily pre-make your bacon and store in the freezer/fridge.

(Warning: it will drive your dog crazy if you have one, haha!)

The assembly is simple. Start with the bread. If you’ve just pulled it out of the fridge or the freezer, you may want to give it a light toast to warm it up.

Then I pile on as much spinach as I can. Honestly, the more, the better!

Place two slices of roasted turkey on top of the spinach.

After the turkey, I spread as many tomato slices as I can fit over the face of it, followed by sliced avocado kind of fanned out.

Add a dash of salt + pepper.

Drizzle the honey mustard over the sandwich and place the two pieces of bacon on the side.

Oh my goodness that looks so good! I feel you on the avocados. Being from Florida, I’m used to them being around all the time and on sale a lot. Not quite the same in the Midwest. Trying this recipe may be my excuse to splurge on a couple. Thanks!

I’ve never ever tried mustard in my life but the honey one made me reconsider this choice of mine. Also made me crave some nice toast right now! I don’t eat swine meat so turkey bacon would be a great option! I love it <3

I love recreating recipes from restaurants I like! I stole a raw cacao smoothie from my favorite place in SF and now it’s something I eat all the time.

Thanks for sharing, looks delicious. I haven’t tried that Ezekial bread, but I enjoy eating their sprouted tortillas (though I think they stopped selling those because I can’t find them anywhere!!). Also that honey mustard looks delicious!

YES to the Harriet the Spy reference! It was my all time favorite movie growing up, and I always think the same thing when I am chopping tomatoes!
