6 Summer Salads to Eat All Season

I LOVE a great salad in the summer. One year while I was home for the summer, my mom and I decided that we were going to make salads at home every day and perfect our recipes. For some reason, I feel like salads always taste better when other people make them. But they also taste better in the summer when produce is as fresh as possible!

I cannot stop eating salads and I am totally fine with it. It’s that time of year when I crave more fresh veggies and love eating a salad on my balcony or in the backyard. Salads can have a bad reputation for being boring or bland, but I’ve got some recipes that will totally prove that idea wrong.

1. Grilled Asparagus Salad with Basil Vinaigrette

Grilled asparagus, tangy goat cheese and sweet sun-dried tomatoes all finished off with a bright and refreshing basil vinaigrette. This is summer.

2. Greek Watermelon Feta Salad

It took me some time to warm up to watermelon salads, but this Greek version is so refreshing and perfect for summer. Definitely a go-to for summer potlucks.

3, Herbed Tofu Salad Dressing

Using soft tofu is one of my favorite ways to lighten up a heavier, creamier dressing. This herbed version is a great alternative to ranch dressing.

4. Summer Quinoa Salad

This is a favorite and one that I (and many of my friends) still make all the time. It’s great for lunches or for weeks when you’re trying to eat a little bit better.

5. Charred Corn and Farro Salad

Farro is my favorite grain, and the sweetness of summer corn works perfectly with this nutty grain.

6. Grilled Zucchini Salad with Basil and White Beans

This flavor combination is out of this world. I remember being so excited when I first developed this salad, it will blow your mind.
