I wish I had this post last week while I was on Nantucket. It was hot and the house wasn’t air-conditioned. It was pleasant with the windows and doors propped open, but I had zero desire to heat up the house even more with the stove or oven on! All of Louisa’s recipes sound delicious!!

This summer has been insanely hot. So much so that the idea of turning on my oven and heating up my apartment is not my idea of fun. To avoid that, I’ve been eating tons of salads and using grocery store staples (like rotisserie chicken) for the bulk of my meals. There’s nothing wrong with a little shortcut, is there?

Here are five of my favorite no-cook recipes that are keeping me going right now.

  1. Antipasto sandwich takes all of your favorite antipasto ingredients and puts them into a fresh baguette. Bonus, this recipe can be made a day ahead and is perfect for picnics.

Avocado chicken salad with basil is one of those rotisserie chicken swaps I’ve been doing. Just the use meat from the breasts for this perfect chicken salad. It’s so fresh and uses avocado and yogurt to keep it on the lighter side.

Ginger turmeric smoothie this is like sunshine in a cup! It’s the perfect summer breakfast.

Bagels with scallion caper cream cheese add some smoked salmon and you’ve got my favorite bagel. Can you tell sandwiches have been a lifesaver?

White bean tuna salad is another dish that is a quick lunch or dinner. I love using canned tuna for a quick dinner!

Avocado feta dip yes, sometimes a homemade dip with corn chips is dinner. And that’s ok, because it’s delicious.
