5 Effortless Summer Dinners

If there’s one thing that I love the most about the summer it’s how effortless dinner can be. Fire up the grill, grab some local produce and you’re pretty much good to go. The key to making cooking in the summer feel effortless is to have a few easy, go-to recipes up your sleeve. These are my go-to recipes that I’ve been cooking on repeat already this year. 

 

1. One-pot couscous with shrimp, zucchini & corn 

 

Couscous is one of the fastest cooking pantry staples out there–it’s essentially a pasta and it cooks in 5 minutes. It’s a staple of my kitchen in the summer when I don’t want to turn on the oven. 

2. Puff Pastry Zucchini Tart 

This is one of my go-to recipes for a summer potluck, it looks so impressive but just takes a few simple ingredients; zucchini, ricotta and parmesan are the start of the show. 

3. Grilled Asparagus with Sesame Dressing 

I love grilling zucchini and this one gets a bit of a Japanese-flair with a sesame oil, soy sauce and rice vinegar dressing–to round out this meal, I’ll grill my salmon and cherry tomato foil packets

4. Zucchini and Basil Mini Crustless Quiche 

I love prepping these for snacking on throughout the week or for a quick grab-and-go breakfast (or office lunch). If there is one flavor combination you need to try this year it’s basil and zucchini–you can thank me later! 

5. Avocado Corn Salad 

Add in some white beans and you’ve got yourself a delicious and filling salad! It holds up well in the fridge and is the perfect not-sad desk lunch, if you’re looking for a full meal, add my traditional Greek souvlaki.

These sound yummy! The avocado corn salad would be the perfect accompaniment to a nice piece of grilled fish! Or honestly, eat it as a chip dip, ahah! Yummy either way!
