8 Healthy Recipes To Make This Year

If eating healthier is one of your goals this year, definitely check out these recipes. Ever since I started working out regularly, I have found myself craving better foods. I especially didn’t want to ruin what I had done in the gym by reaching for something unhealthy afterward. All of these recipes look amazing, but I think the sweet potato one might be what I try to make first. It looks delicious!

Ever since 2018 started I’ve been on a roll with healthy recipes. I think it’s because my holiday season was positively packed with celebrations, parties, and dinners out that I really felt like I needed a bit of a reset to get the year started on the right foot.

If you feel the same way, then I definitely think you’re going to want to try some of these really simple and healthy recipes! Some are standby, old favorites and others are completely new recipes that I know you’ll love.

1. Ginger Turmeric Mango Smoothie
This is how you start your morning off on the right foot! Packed with fresh ginger and turmeric, a little bit of cinnamon and honey, orange, banana and frozen mango this smoothie basically has every cold-busting ingredient I could find in my kitchen.

2. Slow Cooker Brown Rice Chicken Congee
Have you ever tried congee? It’s one of my favorite comfort foods and I veered away from the traditional and used brown rice in this version. It’s a delicious savory rice porridge that is created as rice disintegrates after prolonged cooking, then it’s served with your favorite toppings—I always use soy sauce, sesame oil, coriander and salted peanuts.

3. Roasted Carrot and Fennel Soup
This recipe was inspired by the Chez Panisse cookbook and the style of California cuisine pioneered by Alice Waters. I used vegetables we have in season in Ontario right now (carrots and fennel) and used them as the base of the soup.

4. Miso Roasted Sweet Potatoes
I did a bit of a cleanse last year and these sweet potatoes were something I ate all the time. The sweet/ savory combo of sweet potato and caramelized miso can’t be beat.

5. Healthy Chicken Lettuce Wraps
This is another recipe I developed while I was doing that cleanse, these are super simple and packed with flavor from lime juice, chili flakes, sesame oil, and ginger.

6. Spicy Ginger Scallion Soup
This has been a personal favorite of mine for about three years now. It is just so good and is ready in 20-minutes!

7. Vegetarian Curry
Whenever I’m in the mood for something really heavy on the vegetable front, I always whip up a big batch of vegetarian curry. It’s the perfect dish to make on a Sunday and eat throughout the week.

8. Sweet Potato, Kale and Quinoa Salad with Tahini Dressing
I’ve become obsessed with this vegan tahini dressing. I put it on everything! It all started with this sweet potato and kale salad though.

Oooo I’m glad there are some vegan options here that are different (getting sick of chickpea this and chickpea that) Sweet potatoes are roasting in the oven as I type this.

All of these recipes sound amazing! I’m getting a Vitamix for my birthday this year so I am pinning that ginger turmeric mango smoothie.

Sweet potatoes and lettuce wraps are always favs for me and I am always looking for new ways to cook them. Also, I completely agree no one wants to undo all that hard work from the gym. Great ideas!
