Summer Recipes

Our town’s farmer’s market is fantastic. Mike and I love going there every Thursday and picking up fresh produce and meats from local farms. We have our favorite vendors (like the pickle truck!), but it’s also fun to just go and get inspired to make random things with what looks the best. (I picked out some giant zucchini last week and we’ve been having grilled zucchini with almost every meal.

We also did such a fun thing during our trip up to his lake house. Everyone paired off into mini teams and each team was in charge of cooking dinner/dessert every night. Prepping, cooking, and clean up. The system was nice in that everyone only had to worry about one night and every day had a different “vibe” depending on the person cooking. We’re going back up again this month, so I’ve been searching recipes that Mike and I can do together this go around… Between that and our backyard dinners, I have saved many summer-ready recipes!

Just scrolling through this has my mouth watering!!

I am doing this same thing with my boyfriend’s family! There’s three couples on the trip and each is in charge of one night of dinner and a breakfast over the course of the trip. So fun and though we have three weeks to go, I’m already figuring out what our plan should be! These look delicious!

Just because we’re not in the mood to fire up the oven in the summer doesn’t mean we’re off the hook when it comes to pulling together delicious meals.
